Cabernet Sauvignon is the workhorse of the world’s most famous wine region, Bordeaux. Unlike Pinot Noir though, it has also made many excellent wines in other countries (provided it gets enough heat and sun to ripen out its signature green characters). Cabernet Sauvignon is famous for its strong tannins and longevity in the cellar, and while in something of a decline in NZ due to our relatively cool climate, the quality of the wines that remain have never been better.
