White Wine can be from aromatic varieties like Sauvignon Blanc, Riesling, Gewürztraminer or fuller bodied Chardonnay tending to dry in style. At pressing the juice is immediately separated from the skins, avoiding tannin extraction, the emphasis on fruit. Balanced acidity provides structure and makes a wine sing. Dry white wine is more widely suited to foods than sweet white, dry white wine is also more broadly enjoyable without food.
