Description

The one and only Bollinger Special Cuvée... a combination of richness, body, power, finesse, and balance… personifying its style and placing it among Champagne’s finest. The crafting of Bollinger: The delicate assembly of the expression of a harvest and reserve wines, some held in magnums between 7 and 15 years. Special Cuvée is composed of over 85% Grand and Premier crus of the three main Champagne varieties: 60% Pinot Noir, 25% Chardonnay and 15% Meunier. It is cellar aged for twice as long as required by appellation regulations. Perfectly dosed at between 7 & 8 grams per litre to preserve its invigorating Brut finish. Its absorbing character comes from the use of very high proportions of Grand and Premier Cru fruit, maturation of the base Cuvée in very old barrels to enhance texture and complexity, use of high proportions of aged reserve Cuvée… completed with an incredible 4-years aging in bottle on lees.

Smells

Generous aromas of toasted oats, Anzac biscuit, honey, and melon… with subtle lemon zest and floral notes.

Tastes

The rich, weighty and compelling palate has prominent toast, honey, Anzac biscuit lees influence supporting rich citrus and melon fruit with delicate fresh citrus edges. Delivered in an explosive platform of very fine bubbles, it’s a beautiful Champagne experience that should always excite. Enjoy whilst young and fresh with white meats, poultry, rich seafood dishes… and as an aperitif.
