"Folies Champagne is a special premium non-vintage release crafted from the first pressings of fruit off the family’s private Chateau de La Marquetterie estate. Made with 45% Chardonnay and 55% Pinot Noir fruit, which is similar to the regular house style in mix. Where you’ll notice a significant difference is in the textural influence of seasoned barrel aging of the base cuvee, 100% first pressings of fruit and further time on lees.
Smells
Alluring aromas of fresh baked bread, lemon meringue, alpine flower and baked apple.
Tastes
A rich explosive mousse - very fine bubbles platforms a mellow palate with bready, hazelnut, baked apple, peach and tangy citrus notes. Has lots of fullness and presence with slightly tangy and delicate edges and would drink beautifully by itself but match nicely with an array of seafood dishes. Top level single vineyard NV Champagne expression best enjoyed fresh."
