Description

Amontillado offers the best of both winemaking techniques inherent to Sherry, biological and oxidative. Amontillado Sherry starts off as a Fino, where a flor yeast protects against oxidation and imparts flavour, the wine is then fortified to 17%+ and undergoes an oxidative ageing process. Amontillado wines typically have a golden colour, not as dark as Oloroso which only undergo oxidative ageing. The flor yeast imparts flavours of almonds, olives and even hints of blue cheese. Marry this with nutty, rancio characters due to oxidative ageing, and the result is heavenly. A must try for all those who have never tasted Amontillado and for those who know and love the wonders of this wine stye.

Smells

beautiful aromas of raisins, toffee, honeyed with hints of olives with a wonderful lemon lift.

Tastes

A delightful amber colour, a rich, full-bodied style with an off-dry edge and flavours of hazelnuts, almonds and walnuts with dates, dried fig, and clove-studded orange notes, all complimented by a great acid drive. Serve with nuts, cheese, asparagus, or risottos.
