Description

The Elephant Hill winery, founded by Roger and Reydan Weiss, is one of Hawke’s Bay’s most striking wine estates — and their Hieronymus label sits at the very top of the range. Named in honour of the Weiss family’s noble ancestor, Hieronymus Ebner von Eschenbach, this flagship red blend carries both legacy and luxury in every bottle. We thought the 2019 was special, but the 2021 vintage may be one of the finest reds ever made in Hawke’s Bay. A commanding blend of Cabernet Sauvignon (50%), Merlot (42%), and Cabernet Franc (8%), all sourced exclusively from the Gimblett Gravels, this wine has power, poise, and pedigree. Aged for 22 months in French oak (50% new), it delivers rich dark fruits, cassis, fine tannins, and superb structure. While approachable now (with a good decant), it will reward cellaring for 15+ years. An iconic wine from an outstanding vintage — Hieronymus 2021 is a must for serious collectors and lovers of premium Bordeaux-style reds.

Smells

Brooding aromas of mocha, cassis, blackcurrant and graphite, subtle savoury complexities of leather and forest floor.

Tastes

Breath-taking purity of dark berry fruit, dark chocolate, and mocha with the characters changing to beautiful milk chocolate and espresso flavours lingering long after the wine is swallowed. Lovely mineral textures/flavours and chalky tannins provide a beautiful structure and aid complexity. Not a hair out of place, but with smouldering, latent power waiting to be unleashed, this is a wine for the long haul but one that can be approached with time in the decanter during its youth. Enjoy with high-quality cuts of meat between now and beyond 2032. The recommended serving temperature is 15-17 degrees.
