A true collaboration between two Italian legends, Grappa di Sassicaia is the elegant result of a meeting between Tenuta San Guido and Poli Distillerie, a family with over a century of artisanal distillation expertise. In 1994, Marchese Nicolò Incisa della Rocchetta entrusted Jacopo Poli with the task of distilling the pomace from the revered Sassicaia wine. Crafted from Cabernet Sauvignon and a touch of Cabernet Franc, the pomace is soft-pressed and distilled immediately to preserve its fresh and vibrant aromatics. Using one of Italy’s oldest functioning steam stills, the marc undergoes a careful three-hour distillation process. Only the purest part of the distillate—the “heart”—is kept, discarding the heads and tails to capture the essence of the grapes in their truest form. Aged for four years in French oak barriques, this Grappa develops extraordinary depth, offering a refined and complex spirit with notes of dried fruits, toasted wood, herbs, and spice—a fitting tribute to the noble origins of its raw material.
