The Hayman family are custodians of true English gin heritage, tracing their lineage back to 1863 and the original gin distilleries of London. As the only family still distilling traditional styles such as Old Tom, their approach is both reverent and refined, blending historic recipes with modern finesse. Made in small batches using a two-day maceration and copper pot distillation, Hayman’s Old Tom is a faithful re-creation of the 19th-century style once favoured in classic gin cocktails like the Martinez and Tom Collins.

Lush and full-bodied, the palate delivers an elegant interplay of sweet and spice. Juniper leads, but it’s rounded by velvety notes of orange peel, cardamom, and a gentle caramelised edge. The texture is notably smooth, with a slight, natural sweetness that gives it weight without syrupiness. Mid-palate reveals more earthy botanicals: orris root and subtle cinnamon, finishing with a beautifully balanced dryness and a lingering citrus note.
