Description
Like all Pegasus Bay wines, Encore is named after Donaldson family matriarch Christine Donaldson's love and patronage of opera. Encore is a Noble style with heavily botrytised fruit fermented to 10.5% alcohol with 266g/l of natural sugar. Lusciously sweet and honeyed with exotic tropical fruits, apricots and coconuts, Encore is a benchmark sweet wine that goes with fruit-based desserts or with any cheeseboard after dinner.
Smells
wonderful aromas of orange blossom, orange rind, marmalade, dried apricots and a delightful lift of white lilies.
Tastes
This is a very powerful, concentrated wine with exuberant sweetness balanced by the crystalline acid thread that titillates the taste buds and refreshes the senses. Dried fruit flavours of mango and pear morph into lavender and honeysuckle. This wine has a century or more of life ahead of it, and is enough of a dessert in itself, or serve with cheese and a dried fruit selection.
