Description
Whenever someone mentions the word Sherry, it conjures thoughts of Grandma’s drinks cabinet with those bottles of sweet, brown liquid. This Dos Palmas however, is worlds apart and hard to imagine that they carry the same name. The best Sherries are always dry and it’s the ageing process that makes them taste completely different. Dos Palmas is an eight year old Fino selection where casks still retaining a flor (yeast) covering, were blended and bottled, unfined and unfiltered. Much more concentrated and intense than Una Palma.
Smells
Wonderful aromas of roasted almonds, toasty, nutty notes with toffee, dried fruit and the merest hints of salted lemon peel.
Tastes
A rich, full bodied, dry style with lashings of nutty, rancio flavours giving way to a salty, salivating vein. A wonderful combination of oxidative handling giving those nutty flavours and the non-oxidative handling (flor) imbibing lemon, salt and olive nuances. Heaven in a glass especially when served with a slice of jamon.
