Harvested from a single vineyard in Coonawarra, world renowned for its Terra Rossa soils and World Class Cabernets. The fruit was hand-picked at optimal ripeness to preserve both power and poise. Cold soaking prior to fermentation encouraged gentle extraction of colour and aromatics, followed by a controlled ferment to retain vibrant fruit character. Post-fermentation, the wine was matured in a selection of fine French oak barriques, 20% new, for 10 months, allowing integration of oak spice, structure, and age-worthy complexity. The result is a wine of rich cassis and blackberry layered with dark chocolate, cedar, and graphite, framed by refined tannins and bright natural acidity.
Smells
Lovely aromatics with true Cabernet character. Lifted blueberry, blackcurrant & blackberry fruits, hints of violet and flowering thyme, dried autumn leaf and subtle toast.
Tastes
The palate is laden with fresh blue & dark berry fruits infused with floral and savoury characters plus seductive hints of cocoa and fine cedary oak. Medium to full-bodied it flows through the palate with a nice line of fine tannin wrapped around a strong persistence of fruit. A delicious Cabernet drinking well now through 2028-2030 and will match with BBQ beef or pork ribs.
