We’re CLEARING surplus stocks of 2019 Ayrburn Whimsy Central Otago Pinot Noir at a spectacular $19.99 bottle. Due to the impact of Covid and the domestic and global recession affecting hospitality and wine sales… Ayrburn have inadvertently built-up surplus stocks. 6-years old and drinking beautifully, it was crafted by previous World Champion Pinot Noir Winemaker Peter Bartle, also the current Senior winemaker for Akarua. Peter’s winemaking focus has always centred around poise, texture and balance. Since 2017, his Central Otago wines have been awarded 37 Golds + 8 Champion Trophies. The fruit was from fruit sourced from two distinct subregions: the warm, sun-soaked slopes of Bendigo, contributing dark-fruited aromatics and ripe tannins, and the cooler Alexandra basin, offering vibrant acidity and fragrant lift. The 2019 growing season began with vigorous spring growth. A cold snap in mid-November damaged young shoots, reducing yields. A warm, dry summer followed, providing ideal conditions for flowering, while a cool autumn preserved the fruit’s natural acidity—culminating in a classic vintage. Hand-picked fruit was fully destemmed and cold-soaked in small open-top fermenters before undergoing wild fermentation. Post-fermentation, 50% was aged in seasoned French oak barriques and the remainder in stainless steel. Natural malolactic fermentation occurred in spring, followed by gentle filtration and bottling.
Smells
A wonderful bouquet of dried rose petals, dark cherries, giving way to forest floor notes with exotic Asian spices.
Tastes
Classically Central Pinot, combining silky smooth fruit, dark berries with earthy, forest floor, herbal complexities and fine grain tannins that linger, giving length and balance. The silky texture is beguiling, encouraging another sip and keeping you coming back for more. Enjoy now through to 2028, with duck or venison and firm cheese.
