Opening a bottle of this Pinot is like stepping straight into a cosy Queenstown ski lodge—fire crackling, schist walls warm from the heat, and woodfired pizza on the way. This is a deeply evocative wine from the original pioneers of Gibbston, offering a brooding, savoury profile layered with cured meats, wild herbs, and a touch of dark chocolate oak. Tart black cherry and bramble fruit provide the lift, wrapped in silky tannins and fine structure. It’s the classic “iron fist in a velvet glove” – powerful yet elegant. Enjoy now with hearty fare or let it evolve beautifully over the next 3–5 years.
Smells
Hints of wild thyme, cured meat, black cherry and cedary oak.
Tastes
Juicy and fleshy in the mouth, with wooded brambly notes set against fresh summer cherries and an assertive structure. A very strong release from Gibbston Valley that will reward patience (as well as impetuousness). For optimal drinking pleasure the recommended serving temperature is 13-14 degrees. Drink now to 2029. Serve with duck confit, mushroom risotto, or grilled lamb chops.
