Description
Tony Bish is a name synonymous with Chardonnay in New Zealand – in fact, he’s the only winemaker in the country solely dedicated to the variety. Ever the innovator, Tony introduced concrete egg fermenters to NZ winemaking in 2015 through a partnership with NZ Tanks in Hastings. But it didn’t stop there – his love affair with the elegant Taransaud French Oak ‘Ovum’ egg fermenter took his winemaking to the next level, blending form, function, and flavour in the most unique way. His latest release is crafted from hand-picked Chardonnay from the highly regarded Two Terraces Vineyard, nestled in the cooler Mangatahi sub-region of Hawke’s Bay. The grapes were whole bunch pressed, with only the purest free-run juice selected for fermentation in a mix of new and seasoned French oak barriques. Expect a wine of precision and elegance, with gorgeous texture, vibrant citrus and stone fruit notes, and that hallmark Bish complexity and structure. A must-try for lovers of serious Chardonnay – innovative, expressive, and utterly compelling.
Smells
Lifted aromas of culinary herbs, citrus blossom, vanilla, hazelnut and white peach with complex oak spice nuances.
Tastes
The palate is intense and richly layered with a creamy mouthfeel and incredible drive and long persistence. Lingering flavours abound, with crème brûlée, crisp green apple and lemon meringue. A wine that will cellar 6-10 years. Serve with a fine home cooked meal involving roasted white meats or even crispy pork belly. The recommended serving temperature is 10-13 degrees.
