Description
A complex white wine, made from 85 year old vines in the Carramainas vineyard at 850m above sea level. 95% Macabeo and 5% Garnacha Blanca, the grapes were gently whole bunch pressed, and racked to 500L French oak barrels, undergoing a spontaneous fermentation that took approx. two weeks. The wine was aged for 3 months on full lees and a further 12 months on fine lees, giving the finished product incredible flavour, complexity and texture.
Smells
An engaged nose of pineapple, white flower and honey, with notes of almond and a salty edge.
Tastes
Concentrated, complex and very textural with sherry-like salinity, juicy tropical fruit and biscuit mealiness. Enjoy through to 2029 with olives, aromatic fish or roast chicken.
