Very few other wines of the world make me so excited with the anticipation of tasting, than the amazing wines from Sancerre. A very different style of Savvy compared with God’s Zone but well worth trying. These wines are about the soils in which the vines grow and the structure of the resulting wines, rather than those punchy, gooseberry flavours, and the salivating, acid driven style of NZ. Pascal is focused on soil types, this being a blend of grapes grown on limestone (50%), clay-limestone (30%) and 20% chalk. Clay gives richness to the wine whereas limestone and chalk give flinty characters and minerality. A beautiful harmony in the glass. Be adventurous, you won’t regret it.


aromas of lemon peel, fresh fennel, pears and nectarines with hints of dried hay with a salty intrigue.


A rich, full bodied style of Sauvignon Blanc where the clay soils give a warm, oily mid-palate and the limestone/chalk soils, the salivating lemon/lime/salty acid and length on the finish. This wine has energy, drive and will totally knock your socks off, whilst showing you another side of this grape variety. Drinking well now till 2026 and will partner well with cheese and/or vegetarian dishes.
