Description
Pegasus Bay Finale is part of their reserve series – a group of wine that’s only released in outstanding vintages. Finale is botrytised Sauvignon Blanc and Semillon where only the most raisined berry are selected… the result is a very tiny production of very concentrated juice which is fermented very slowly and aged sur lie (on full less) in French barriques for 18 months.
Smells
Powerfully perfumed with sweet honey, ripe nectarine and apricot
Tastes
Rich decadent and very viscous. Jam packed with very sweet tropical fruit, apricot marmalade and butterscotch. The presence of botrytis adds complexity and a burnt caramel notes to an otherwise very unctuously sweet dessert wine. Deliciously drinking now, but will continue to evolve until 2027+. Enjoy with foie gras, Saint Agur or tarte tartine.
