Description
An expensively made, tribute NZ Pinot Noir… crafted in an opulent, rich, savoury style capturing the essence of both new and old worlds in blissful harmony. The grapes are traditionally picked into an open top fermenter and the fruit cold soaked for 7 days to achieve excellent colour and fruit extraction. Indigenous fermentation starts spontaneously. After 7 days, the wine undergoes post ferment maceration on skins for one more week. The ferment is then pressed to fine French oak and aged for 12 months. Finally, the barrels are brought together for blending, where the wine is filtered but not fined, to preserve character. From the superb 2021 vintage it will drink well through 2026-2027. A concentration of dark berry flavours charge through the palate with energy, wrapped in cheek-hugging tannins and fine juicy acidity. Opulent, full bodied Pinot Noir laced with spices, dark chocolate, and rich savoury characters. A wine for the long-haul if you wish to cellar 5-7 years or more in quality storage. It will evolve nicely and pair well with pasta, duck, or game meats.
