The Winemaking - Fruit was hand harvested maintaining the delicate balance between ripeness & acidity. Gently pressed... only the free run juice going to tank with just 4% run to seasoned French oak barrels. Slow cool fermentation ensured the purity of fruit followed by aging on yeast lees for 6 months to build texture & mouth feel. Both parcels were blended prior to bottling, adding layers of texture & complexity to the finished wine. 100% Delicious now – try aging a few bottles for 3-4 years... Pinot Gris of this elite quality drinks even more stunningly with age.
