James Millton describes his Les Arbres Viognier as 'umami', the Japanese term for a savoury flavour not covered by sweet, sour, bitter, and salty. This gives Les Arbres Viognier a mouth-watering edge to go with its stunning array of pears, apple tart and apricot. Wild fermentation in 600-litre demi-muid barrels, the wine aged sur-lie and bottled on the property.

This vintage has the saline structure of sake with aromas of caramel, baked pears, apple tart and warm leather, a hint of fennel, and aniseed.

The texture gives warmth to these aromas, like walking on a crunchy shingle pathway through a flower garden on a summer’s afternoon. The taste is velvet smooth with a tannin grip showing beautiful harmony across the phenolic structure. Rich and complex with a creamy mid-palate, leading to a long, detailed finish with a faint savoury hint. Mouth-watering wine that will be amazing with pork belly, Les Arbres 2020 is not to be missed.
