"A very pale, mature type of wine showing some bottle-aged complexity in the savoury, dry Ayala house style. It’s still fresh, with savoury interest, and meaty in character rather than “pretty”. The firm palate has excellent texture, good fruit depth, and, as Sarah-Kate Dineen put it, “a peacock’s tail” in the mouth, meaning that the flavour expanded and grew beautifully at the end."
