Description
This is a combination of select parcels of fruit and some aged reserve to ensure the finest possible base for the cuvee which then undergoes secondary fermentation in the bottle aging on lees for 3-4 years (a la prestige French Champagne). Chardonnay dominance gives it that richness and elegance and 35% Pinot Noir provides its compelling length and underlying power.
Smells
Aromas of fine citrus and fresh apple infused with hints of bread, Anzac biscuit and almond.
Tastes
The bubbles are explosive throughout the palate eventually melting way leaving a salivating aftertaste of all the fine flavours gently wallowing in fine acid and in complete harmony, savour while fresh within 12-24 months.
