Description
Sherry, truly one of the unsung heroes of the wine world and where Tio Pepe is leading the pack, especially with their Palmas range. A very limited release of aged wines that are unfined or unfiltered. A wonderful experience of the various ages of the Tio Pepe solera system. Una Palmas is a careful selection of the rarest of barrels retaining a flor (yeast) covering, despite being six years or older. Typically, the flor dies within 3 years. A wonderful combination of Fino and Amontillado flavours.
Smells
Heady aromas of green olives, salted lemon peel, fresh salty sea breeze and hints of blue cheese, giving way to grilled almonds and a dash of toffee and dried figs.
Tastes
The best Sherries are always dry and this wine is the perfect example, where those same flavours flow through on the palate, salty, salivating texture leading to nutty and toasty nuances with hints of rancio. Simply superb drinking now as an aperitif served with grilled almonds, olives and cured meats. The best way to start an evening.
