It began with attention to detail in the vineyard, with high density planting to create deliberate low yields per vine, enabling the growing of consistently fully ripened and healthy grapes every year. In the winery, the grapes are de-stemmed and then basket pressed to avoid over extraction. Then macerated and hand plunged on skins for an extended time before aging 20 months in French oak (15% new) followed by 6-years aging in bottle.
