Unsurprisingly... that is what they named this superstar McLaren Vale Shiraz... “Pepperjack Graded Scotch Fillet Shiraz”. McLaren Vale Shiraz is a perfect partner for a Scotch Fillet, slightly marbled it’s one of the softer, tender cuts of beef coming from the upper rib cage area which does not support much weight. This cut perfectly complementing the more savoury style of the fruit from McLaren Vale. A serious wine for a serious cut of beef. Will age beautifully through 2029... but why wait?

Smells
Rich dark aromas of coffee grinds, blackberries, plums, spice, toasty vanilla and the characteristic earthy, savoury complexity of the McLaren.

Succulent black fruits instantly subsume the chewy structural tannins. Lashings of dark chocolate and mint persist alongside dark plummy, berry fruit, exotic spices and hints of tarry, toasty oak complexities permeating the delicious climax.
