From the excellent 2016 Waipara vintage this is impressive Reserve quality... not simply a designation. It is a hands-on production from the vineyard to the bottle. Grapes are handpicked into small baskets and the fruit is destemmed with a judicious portion of whole berries retained in the natural ferment carried out in small batch open top traditional concrete fermenters. A twice daily gentle hand plunging of the cap during fermentation and maceration ensure the tannins are fine and elegant and the fruit is pure and not over extracted. A secondary malolatic ferment perfectly rounds the palate before sending to 100% French oak barriques for 18-months further ageing. To maximise its character and intensity it is bottled unfined and unfiltered.

The fruit is destemmed, and a portion of whole berries are retained in the natural ferment carried out in small batch open top traditional concrete fermenters. A twice daily gentle hand plunging of the cap during fermentation and maceration ensure the tannins are fine and elegant and the fruit is pure and not over extracted. A secondary malolatic ferment perfectly rounds the palate before sending to 100% French oak barriques for 18-months further ageing. To maximise its character and intensity it is bottled unfined and unfiltered. It’s a bit to absorb... but important for you to know when you’re buying the wine label unseen. That you understand the uncompromising quality of the wine from soil to bottle so you can see it is worthy of its “Reserve” designation. 5-Years old it is drinking stunningly now... and will do so for a further 5-years.
