Description

This premium hand-picked and sorted Pinot Noir from a north facing single vineyard in the Omaka Valley. The vineyard is dense with clay and cropped to tiny yields (the equivalent of one bottle per vine). Wild fermented and macerated on skins for 2 weeks post-fermentation before 18 months in French Oak, bottled unfined, unfiltered and carrying organic/biodynamic certification. Now at 7 years of age this wine is really hitting its straps and will continue to do so for at least another 3 years. Smells

Ethereal with wild blackberry, blueberry, dried thyme, aged leather and subtle spice

Tastes

Concentrated, yet elegant and long with notes of black plum, blackberry and earthy/savoury undertones. Soft fine tannins aid the impressive length. Best enjoyed now or until 2023 with home cooked game meats.
