Description
A single vineyard Chardonnay from Kaikora Vineyard in Ōtāne, the clone UCD15 Chardonnay on its own roots. The fruit was 100% hand-picked, whole bunch pressed to French oak barriques for fermentation. Indigenous yeast carried the ferment to dryness. The wine spent 11 months in oak prior to bottling; there was no fining or cold stabilisation.
Smells
A bouquet that opens with airtime, developing aromas of wheat biscuits, oyster shells with grapefruit, flint and smoky notes.
Tastes
A wine with flare, that finishes stronger than the initial sip leads you to believe. In the wine-tasting world, this is what we all long for, depth, drive and complexity through to the end. And this delivers all of that and more. A taught structure but a wine with concentration and class, with a salty, saline finish with energy and drive. A top-class Hawke’s Bay Chardonnay that one could describe as somewhat half way between Meursault and Puligny Montrachet. The best Bilancia Chardonnay to date. World class. Cellar for 5-8 years+ and serve with rich, roasted meats, quail or pork belly. Recommended serving temperatures is 11-13 degrees.
