The Kimmeridgian limestone contains millions of tiny marine fossils embedded in a kind of whitish mortar which may have been once the bottom of the sea...hundreds of million years ago. This marine origin gives the wines of Chablis their unique flavour. A regular favourite of Fine Wine Delivery is this Drouhin-Vaudon Chablis which is particularly fine. It exhibits the texture and finesse that many prize in Chablis and importantly its fine acids and refreshing mineral edge. Best enjoyed with most shellfish (particularly fresh oysters) and equally with BBQed pork belly. Enjoy now through to 5+ years from vintage.
